I will try to limit this to a few selections for each genre:
Rock: Pink Floyd, The Rolling Stones, Bob Dylan, the list goes on...
Country: Bob Dylan in his Nashville Skyline era, or I really like Brad Paisley for his guitar work.
Blues: Stevie Ray Vaughan, Rory Gallagher, Robert Johnson, Joe Bonamassa.
Jazz: Jeff Beck for his jazz fusion stuff, Royce Campbell...
