My mom made (past tense) the best Strawberry pie! She died suddenly of a heart attack about 6 years ago (no warning, no heart trouble before that). I had never asked her for the recipe.
It took me 5 "newsgroups" and about 30 people making suggestions, and about 8 or 9 pies until I finally got what tastes like Mom's recipe for Strawberry Pie!
Baked shell (9 inch will overflow, 10 inch if possible)
1-1/4 cup of sugar
2 or 3 tablespoons cornstarch
pinch of salt
1-1/2 cups of water
3 tablespoons lemon juice
1 box of strawberry jello
1 qt fresh strawberries – cut / cleaned
In medium saucepan combine
sugar, cornstarch, salt, water and lemon juice.
Over high heat, bring to BOIL
Reduce heat, cook & stir 4-5 minutes, until slightly thickened and clearish
add gelatin, stir until dissolved
IMPORTANT
allow to COOL to room temperature
THEN
add strawberries and mix it all up
Dump into cooled
9 inch DEEPDISH
Or
10 inch pie shell
Chill 4-6 hours or until set.
